Grill-Smoked Pork Butt
Makes 6 to 8 servings

Ingredients
  1. 1 (7- to 8-pound) bone-in Boston butt
  2. Basic Barbecue Rub (recipe follows)
Instructions
  1. Coat pork with Basic Barbecue Rub. Wrap in plastic wrap; refrigerate for 12 to 24 hours.
  2. Remove plastic wrap. Prepare grill as directed in our guide; preheat to 250°.
  3. Place pork on unlit side of grill. Grill, covered, until a meat thermometer inserted in thickest portion registers 190°, about 71⁄2 hours.
  4. Remove from grill; wrap in foil. Let stand for at least 30 minutes before shredding.

Basic Barbecue Rub
Makes about 1 1/2 cups

  1. 1/4 cup smoked paprika
  2. 1/4 cup firmly packed light brown sugar
  3. 3 tablespoons kosher salt
  4. 2 tablespoons onion powder
  5. 2 tablespoons garlic powder
  6. 2 tablespoons dry mustard
  7. 2 tablespoons chili powder
  8. 2 tablespoons ground black pepper
  9. 2 teaspoons ground red pepper
Instructions
  1. In a small bowl, stir together all ingredients.
