Grill-Smoked Pork Butt

Makes 6 to 8 servings
Ingredients
- 1 (7- to 8-pound) bone-in Boston butt
- Basic Barbecue Rub (recipe follows)
Instructions
- Coat pork with Basic Barbecue Rub. Wrap in plastic wrap; refrigerate for 12 to 24 hours.
- Remove plastic wrap. Prepare grill as directed in our guide; preheat to 250°.
- Place pork on unlit side of grill. Grill, covered, until a meat thermometer inserted in thickest portion registers 190°, about 71⁄2 hours.
- Remove from grill; wrap in foil. Let stand for at least 30 minutes before shredding.

Basic Barbecue Rub

Makes about 1 1/2 cups
Ingredients
- 1/4 cup smoked paprika
- 1/4 cup firmly packed light brown sugar
- 3 tablespoons kosher salt
- 2 tablespoons onion powder
- 2 tablespoons garlic powder
- 2 tablespoons dry mustard
- 2 tablespoons chili powder
- 2 tablespoons ground black pepper
- 2 teaspoons ground red pepper
Instructions
- In a small bowl, stir together all ingredients.
