Buffalo Chicken Banana Peppers

Ingredients
- 1½ cups chopped cooked chicken
- 1 (8-ounce) package cream cheese, softened
- 1 cup shredded Parmesan cheese
- 1 tablespoon hot wing sauce
- ½ teaspoon salt
- 12 banana peppers, halved and seeded
- Garnish: hot wing sauce
Instructions
- Preheat oven to 400°. Line a rimmed baking sheet with parchment paper.
- In a medium bowl, stir together chicken and next 4 ingredients. Spoon mixture into banana pepper halves, and place on prepared pan. Bake for 15 minutes or until peppers are softened. Drizzle with additional hot wing sauce, if desired.

I was kinda thinking the same thing instead of adding parm, do motz cheese and then dip in Blue Cheese or Ranch.
I rescued my banana peppers before a serious freeze this week. This was a great way to use them up for a pot luck. It was fun letting the peppers ripen: it made it a colorful dish.

I stuff my banana peppers with fresh sausage, onions, shredded Parmesan cheese, tiny amount of basil and mix. Salt and pepper to your liking. Cut a small side off a pepper to make the pepper like a boat. Stuff sausage mix into the pepper boat. Roll in bread crumbs.
These freeze well and make a nice quick dinner or a delightful snack!!!

Going to make a bunch a bunch and freeze them for Thanksgiving appetizers. I’ll wrap some in bacon when I bake them. I have a couple bushel of peppers I’m working on right now. I will also be making jalapeño poppers and freezing.
Does anyone think this would turn out just as good in a skillet or on a grill.

That’s how I do my poppers , but I’ve been putting them in an electric smoker for about an hour and 20 minutes with peach wood , the bacon wrap cooks perfect in that time
My step mom made these for us on Sunday and there were so awesome! I’m doing a low carb diet so these were perfect she usually makes potato salad when having us for dinner which is a weakness of mine so it was nice she made me something low carb so I didn’t fall off the wagon
