Yield: approximately 2 cups
Ingredients
- ¼ cup coriander seeds
- ¼ cup fennel seeds
- 1 cup kosher salt
- ¼ cup sugar
- 2½ tablespoons ground black pepper
- 4 teaspoons smoked paprika
Instructions
- In a small skillet, cook coriander and fennel seeds over medium- high heat, stirring frequently, until fragrant, approximately 2 minutes. Remove from heat.
- Using a spice grinder or a mortar and pestle, lightly grind toasted seeds. Transfer to a small bowl. Stir in salt and remaining ingredients. Transfer to sealable containers, such as jars. Cover and store up to 3 months.
