Quick-and-Easy Vidalia-Onion Pizza

Yield: 1 (12-inch) pizza
Ingredients
- 1 (12-inch) prepared pizza crust
- 1⁄2 cup garlic-flavored marinara sauce
- 1 cup sliced fresh mushrooms
- 1 cup Caramelized Vidalia Onions (recipe follows)
- 1 cup shredded mozzarella cheese
- 1⁄2 cup grated Parmesan cheese
Instructions
- Preheat oven to 350°.
- Place pizza crust on a baking sheet. Spread tomato sauce on crust, leaving a 1-inch border. Top with sliced mushrooms, Caramelized Vidalia Onions, mozzarella cheese, and Parmesan cheese.
- Bake until cheese has melted, approximately 10 minutes.

Caramelized Vidalia Onions

Yield: approximately 3 cups
Ingredients
- 4 to 5 pounds Vidalia onions, peeled and thinly sliced
- 4 tablespoons butter
- 2 tablespoons olive oil
Instructions
- In a large heavy saucepan, melt butter over medium heat. Add oil, and heat until hot. Add onion, and cook, stirring constantly, until onion just begins to brown, approximately 10 minutes.
- Reduce heat to medium-low; continue to cook, stirring frequently, until onion reaches a light caramel color, 20 to 35 minutes. Store, covered, in refrigerator up to 1 week.
