Oatmeal-Pecan Fig Bars

We love eating these bars for breakfast or an afternoon snack! Packed with oats, pecans, dried figs, and a bit of orange zest: they’re sweet and satisfying.

Oatmeal-Pecan Fig Bars

Ingredients
  1. 3 cups chopped dried figs
  2. 1 cup water
  3. 1⁄2 cup dry red wine
  4. 1⁄4 cup sugar
  5. 1⁄2 teaspoon orange zest
  6. 1⁄8 teaspoon kosher salt
  7. 3⁄4 cup unsalted butter
  8. 1 cup firmly packed light brown sugar
  9. 1 3⁄4 cups all-purpose flour
  10. 1 1⁄4 teaspoons kosher salt
  11. 1⁄2 teaspoon baking soda
  12. 1 cup old-fashioned oats
  13. 1⁄2 cup finely chopped pecans
Instructions
  1. Preheat oven to 375°. Spray a 13x9-inch baking dish with nonstick cooking spray. Set aside.
  2. In a medium saucepan, bring figs, 1 cup water, wine, sugar, zest, and salt to a boil over medium-high heat, stirring constantly. Reduce heat to medium-low, and cook, stirring occasionally, until mixture is thickened and reduced to 21⁄2 cups, approximately 10 minutes. Let cool completely. Set aside.
  3. In a large bowl, beat butter and sugar at medium speed with an electric mixer until creamy. In another bowl, stir together flour, salt, and baking soda. With mixer on low, slowly add flour mixture to butter mixture, beating to combine. (Mixture will be crumbly.) Gradually add oats and pecans, beating just until combined.
  4. Firmly press half of crust mixture into bottom of prepared pan. Gently spread fig mixture evenly over crust. Sprinkle remaining crust mixture over fig layer, pressing lightly.
  5. Bake until crust is golden brown, 25 to 30 minutes. Let cool slightly, and cut into bars.

  1. Kitchen Tip: Short on time? Start with store- bought fig preserves, and simply stir in 1⁄4 teaspoon orange zest.
