Whole-Wheat Biscuits

Yield: approximately 1 dozen biscuits
Ingredients
- 1 cup all-purpose flour
- 1 cup whole-wheat flour
- 5 teaspoons baking powder
- 1 tablespoon sugar
- 3⁄4 teaspoon salt
- 1⁄2 cup butter, diced
- 1 cup plus 3 tablespoons whole buttermilk, divided
Instructions
- Preheat oven to 450°. In a large bowl, whisk together flours, baking powder, sugar, and salt. Using a pastry blender, cut in butter until mixture resembles small peas. Add 1 cup buttermilk to flour mixture; stir just until combined. (Add remaining 3 tablespoons buttermilk, if needed.)
- Turn dough out onto a lightly floured surface; knead 2 to 3 times. Roll dough into an 8-inch circle. Using a 2-inch round cutter dipped in flour, cut biscuits; place 1 inch apart on an ungreased baking sheet. Reroll dough as needed.
- Bake until tops are golden brown, approximately 12 minutes. Let cool 10 minutes before serving.
