Whole Wheat Biscuits

Simple whole-wheat, buttermilk biscuits. Pat on some butter and drizzle with honey for the ultimate side of comfort.

Ingredients
  1. 1 cup all-purpose flour
  2. 1 cup whole-wheat flour
  3. 5 teaspoons baking powder
  4. 1 tablespoon sugar
  5. 3⁄4 teaspoon salt
  6. 1⁄2 cup butter, diced
  7. 1 cup plus 3 tablespoons whole buttermilk, divided
Instructions
  1. Preheat oven to 450°. In a large bowl, whisk together flours, baking powder, sugar, and salt. Using a pastry blender, cut in butter until mixture resembles small peas. Add 1 cup buttermilk to flour mixture; stir just until combined. (Add remaining 3 tablespoons buttermilk, if needed.)
  2. Turn dough out onto a lightly floured surface; knead 2 to 3 times. Roll dough into an 8-inch circle. Using a 2-inch round cutter dipped in flour, cut biscuits; place 1 inch apart on an ungreased baking sheet. Reroll dough as needed.
  3. Bake until tops are golden brown, approximately 12 minutes. Let cool 10 minutes before serving.
