Smoky Chicken Salad

This quick-fix chicken salad is full of hearty Southern goodness.

Smoky Chicken Salad
Yield: approximately 4 1⁄2 cups

  1. 4 cups shredded smoked chicken
  2. 1 (15-ounce) can black-eyed peas, drained and rinsed
  3. 8 ounces grape tomatoes, halved
  4. 1⁄3 cup chopped fresh chives
  5. 1⁄4 cup mayonnaise
  6. 1⁄4 cup sour cream
  7. 1⁄4 teaspoon salt
  8. 1⁄4 teaspoon ground black pepper
  9. 1⁄4 teaspoon liquid smoke
  10. Garnish: chopped fresh parsley
  11. Crackers, to serve
  1. In a large bowl, combine chicken, peas, tomato, and chives. Add mayonnaise, sour cream, salt, pepper, and liquid smoke, stirring until well combined. Garnish with parsley, if desired. Serve with crackers.
