Orzo is a rice-shaped pasta that can be found on the pasta aisle at most grocery stores. This chicken and orzo dish combines mushrooms, celery, carrots, chicken broth, white wine, pan seared chicken and orzo in a slow cooker for ease and convenience.

Slow-Cooker Chicken with Orzo

Ingredients
- 2 tablespoons vegetable oil
- 1 pound boneless skinless chicken breasts
- 2 pounds boneless skinless chicken thighs
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 3 cups quartered baby portobello mushrooms
- 1 cup sliced celery
- 1 cup sliced carrot
- 1 cup finely chopped yellow onion
- 2 cups chicken broth
- 1 cup white wine
- 1 teaspoon minced fresh garlic
- 2 cups orzo
- 1 tablespoon lemon zest
- 2 tablespoons fresh lemon juice
- Garnish: chopped fresh parsley, lemon wedges
Instructions
- In a large nonstick skillet, heat oil over medium-high heat.
- Season chicken breasts and thighs with salt and pepper. Add to skillet in batches; cook until browned, 3 to 4 minutes per side.
- Transfer chicken to a 4- to 6-quart slow cooker. Add mushrooms, celery, carrot, onion, broth, wine, and garlic.
- Cover, and cook on high until chicken is cooked through and vegetables are tender, approximately 4 hours.
- Add orzo, stirring to combine. Cover, and cook until tender, approximately 20 minutes. Add lemon zest and juice, stirring to combine. Garnish with parsley and lemon wedges before serving, if desired.
