Skillet-Roasted Tomatoes

  1. 2 pints cherry tomatoes
  2. 1/4 cup olive oil
  3. 2 tsp. herbs de Provence
  4. 1 tsp. minced garlic
  5. 1/2 tsp. kosher salt
  6. 1/2 tsp. crushed red pepper.
  1. Line a large cast-iron skillet with parchment paper.
  2. Add cherry tomatoes and drizzle with olive oil; sprinkle with herbs de Provence, garlic, salt, and red pepper.
  3. Bake at 275 degrees for 1 1/2 to 2 hours, stirring once.
