  1. 1∕4 cup butter, softened
  2. 2 tablespoons sugar
  3. 2 large eggs
  4. 1∕2 cup sour cream
  5. 1∕2 cup whole milk
  6. 1 cup all-purpose flour
  7. 2∕3 cup quick-cooking grits
  8. 1∕2 cup shredded Parmesan cheese
  9. 1 tablespoon chopped fresh rosemary
  10. 1 1∕2 teaspoons baking powder
  11. 1∕2 teaspoon salt
  12. 1∕4 teaspoon baking soda
  1. Preheat oven to 400°. Spray 12 muffin cups with nonstick cooking spray.
  2. In a medium bowl, whisk together butter and sugar. Add eggs, sour cream, and milk; whisk until combined. Stir in flour, grits, cheese, rosemary, baking powder, salt, and baking soda. Mix just until combined. Spoon dough evenly into prepared pan.
  3. Bake until a wooden pick inserted in the center of muffins comes out clean, approximately 15 minutes. Let cool in pan for 5 minutes. Serve warm.
