Roasted Garlic-Chipotle Pimiento Cheese

To make Chipotle Purée, place 1 (7-ounce) can chipotle peppers in adobo sauce in the container of a blender, and purée until smooth. Freeze remaining product in teaspoon dollops for future use.

Ingredients
  1. 1 head garlic
  2. 1 teaspoon olive oil
  3. Pimiento Cheese (recipe below)
  4. 2 teaspoons Chipotle Purée (see description above)
  5. Garnish: smoked paprika
Instructions
  1. Preheat oven to 400°.
  2. Peel outer layers of garlic head, leaving individual skins of cloves intact. Cut ¼ to ½ inch off top until individual cloves are exposed. Drizzle head with oil; wrap with foil.
  3. Roast until tender, about 30 minutes. Carefully remove from oven. Let cool for 10 minutes. Using a small knife, cut skins, and remove roasted cloves.
  4. Make 1 recipe Pimiento Cheese. Stir in roasted garlic and Chipotle Purée until combined. Garnish with paprika, if desired.

  1. 2 cups shredded mild Cheddar cheese
  2. 1 (8-ounce) package cream cheese, softened
  3. 1 (4-ounce) jar diced pimientos, drained
  4. ½ cup mayonnaise
  5. ½ teaspoon kosher salt
  6. ¼ teaspoon garlic powder
  7. ¼ teaspoon onion powder
  8. ¼ teaspoon ground red pepper
  9. Crackers and pickles, to serve
Instructions
  1. In a medium bowl, stir together Cheddar, cream cheese, pimientos, mayonnaise, salt, garlic powder, onion powder, and red pepper until well combined. Serve with crackers and pickles, if desired.
