Ingredients
  1. 1 (750-milliliter) bottle prosecco, chilled
  2. 1⁄3 cup gin
  3. 1 cup Raspberry-Thyme Simple Syrup (recipe follows)
  4. Garnish: fresh thyme leaves
Instructions
  1. In a large pitcher, stir together prosecco, gin, and Raspberry-Thyme Simple Syrup. Refrigerate until chilled. Garnish with thyme leaves, if desired.

Raspberry-Thyme Simple Syrup
Yield: approximately 2 cups

Ingredients
  1. 1 1⁄2 cups fresh or frozen raspberries
  2. 1 cup sugar
  3. 1 cup water
  4. 20 sprigs fresh thyme
  5. 2 (2-inch) strips lemon zest
  6. 2 tablespoons fresh lemon juice
Instructions
  1. In a medium saucepan, bring raspberries, sugar, 1 cup water, thyme, and lemon zest to a boil over medium-high heat, stirring occasionally. Cook until raspberries break down, approximately 20 minutes. Strain through a fine-mesh sieve into a medium bowl; discard solids. Stir in lemon juice. Let cool to room temperature. Store, covered, in refrigerator up to 2 weeks.
