Caramelized onions and fresh mushrooms add big flavors to this simple and delicious pizza!

Quick-and-Easy Vidalia-Onion Pizza
Yield: 1 (12-inch) pizza

  1. 1 (12-inch) prepared pizza crust
  2. 1⁄2 cup garlic-flavored marinara sauce
  3. 1 cup sliced fresh mushrooms
  4. 1 cup Caramelized Vidalia Onions (recipe follows)
  5. 1 cup shredded mozzarella cheese
  6. 1⁄2 cup grated Parmesan cheese
  1. Preheat oven to 350°.
  2. Place pizza crust on a baking sheet. Spread tomato sauce on crust, leaving a 1-inch border. Top with sliced mushrooms, Caramelized Vidalia Onions, mozzarella cheese, and Parmesan cheese.
  3. Bake until cheese has melted, approximately 10 minutes.

Caramelized Vidalia Onions
Yield: approximately 3 cups

  1. 4 to 5 pounds Vidalia onions, peeled and thinly sliced
  2. 4 tablespoons butter
  3. 2 tablespoons olive oil
  1. In a large heavy saucepan, melt butter over medium heat. Add oil, and heat until hot. Add onion, and cook, stirring constantly, until onion just begins to brown, approximately 10 minutes.
  2. Reduce heat to medium-low; continue to cook, stirring frequently, until onion reaches a light caramel color, 20 to 35 minutes. Store, covered, in refrigerator up to 1 week.
