Pumpkin-Chocolate Chip Streusel Loaf
Makes 2 (9×5-Inch) Loaves
Ingredients
- 3½ cups all-purpose flour
- 3 cups granulated sugar
- 1 tablespoon baking powder
- 1½ teaspoons kosher salt
- 1½ teaspoons pumpkin pie spice
- 1 (15-ounce) can pumpkin
- 1 cup vegetable oil
- ⅔ cup water
- 4 large eggs
- 2 (10-ounce) bags semisweet chocolate chips
Streusel Topping
- ½ cup old-fashioned oats
- ½ cup all-purpose flour
- ½ cup firmly packed dark brown sugar
- 1½ teaspoons pumpkin pie spice
- ½ teaspoon kosher salt
- ½ cup unsalted butter, melted
Instructions
- Preheat oven to 350°. Line 2 (9×5-inch) loaf pans with parchment paper and spray with baking spray with flour.
- In a large bowl, whisk together flour, granulated sugar, baking powder, salt, and pie spice. In a separate bowl, add pumpkin, oil, ⅔ cup water, and eggs and whisk until just combined. Combine pumpkin mixture and flour mixture. Fold in chocolate chips.
- Divide batter between prepared loaf pans and place on a baking sheet.
For topping:
- In a medium bowl, whisk together oats, flour, brown sugar, pie spice, and salt. Add melted butter and stir to combine. Sprinkle mixture onto batter in pans.
- Bake until topping is golden brown and a wooden pick inserted into the center comes out clean, 1 hour and 20 minutes to 1 hour and 30 minutes. Let cool in pans for 10 minutes. Remove from pans and let cool completely on a wire rack.
