Pumpkin-Chocolate Chip Streusel Loaf

Pumpkin-Chocolate Chip Streusel Loaf
 
Makes 2 (9×5-Inch) Loaves
Ingredients
  • 3½ cups all-purpose flour
  • 3 cups granulated sugar
  • 1 tablespoon baking powder
  • 1½ teaspoons kosher salt
  • 1½ teaspoons pumpkin pie spice
  • 1 (15-ounce) can pumpkin
  • 1 cup vegetable oil
  • ⅔ cup water
  • 4 large eggs
  • 2 (10-ounce) bags semisweet chocolate chips
Streusel Topping
  • ½ cup old-fashioned oats
  • ½ cup all-purpose flour
  • ½ cup firmly packed dark brown sugar
  • 1½ teaspoons pumpkin pie spice
  • ½ teaspoon kosher salt
  • ½ cup unsalted butter, melted
Instructions
  1. Preheat oven to 350°. Line 2 (9×5-inch) loaf pans with parchment paper and spray with baking spray with flour.
  2. In a large bowl, whisk together flour, granulated sugar, baking powder, salt, and pie spice. In a separate bowl, add pumpkin, oil, ⅔ cup water, and eggs and whisk until just combined. Combine pumpkin mixture and flour mixture. Fold in chocolate chips.
  3. Divide batter between prepared loaf pans and place on a baking sheet.
For topping:
  1. In a medium bowl, whisk together oats, flour, brown sugar, pie spice, and salt. Add melted butter and stir to combine. Sprinkle mixture onto batter in pans.
  2. Bake until topping is golden brown and a wooden pick inserted into the center comes out clean, 1 hour and 20 minutes to 1 hour and 30 minutes. Let cool in pans for 10 minutes. Remove from pans and let cool completely on a wire rack.
