Pecan Sandie Praline Bars

Cookie layer
  1. 1 cup unsalted butter, softened
  2. 1⁄3 cup firmly packed light brown sugar
  3. 1 large egg
  4. 2 1⁄4 cups all-purpose flour
  5. 1 cup finely chopped pecans
  6. 1 teaspoon kosher salt
  7. 1 teaspoon vanilla extract
Praline layer
  1. 2⁄3 cup light corn syrup
  2. 1⁄2 cup firmly packed light brown sugar
  3. 2 large eggs
  4. 2 tablespoons unsalted butter, melted
  5. 1 teaspoon vanilla extract
  6. 1⁄4 teaspoon kosher salt
  7. 1 1⁄2 cups chopped pecans
  8. 1 (12-ounce) package semisweet chocolate morsels
Instructions
  1. Preheat oven to 350°. Spray an 8-inch square pan with nonstick baking spray with flour. Set aside.
  2. In a large bowl, beat butter and sugar at medium speed with an electric mixer until creamy. Add egg, beating until fully combined. Gradually add flour, pecans, salt, and vanilla, beating until combined. Press mixture into bottom of prepared pan.
  3. Bake until edges are golden brown, approximately 15 minutes. Let cool slightly.
  4. In a medium bowl, beat corn syrup, brown sugar, eggs, melted butter, vanilla, and salt until combined; fold in pecans. Pour over cooled cookie layer.
  5. Bake until praline layer is set, approximately 35 minutes. Immediately sprinkle chocolate morsels over praline layer, and let melt. Using an offset spatula, spread melted chocolate evenly over praline layer. Let cool to room temperature before cutting.
