Mini Cinnamon Doughnut Bites

Ingredients
  1. 4 teaspoons active dry yeast
  2. 1 1∕2 cups warm (105° to 115°) whole milk
  3. 3∕4 cup sugar, divided
  4. 2 teaspoons salt
  5. 1∕2 teaspoon ground cinnamon
  6. 2 large eggs, lightly beaten
  7. 1 1∕2 teaspoons vanilla extract
  8. 1∕3 cup butter-flavored shortening, melted
  9. 5 cups all-purpose flour, divided
  10. Peanut oil for frying
  11. Cinnamon Sugar (recipe follows)
  12. Maple Glaze (recipe follows)
Instructions
  1. In a large bowl, combine yeast, milk, and 1∕4 cup sugar. Let mixture stand until bubbly, approximately 5 minutes.
  2. Add remaining 1∕2 cup sugar, salt, cinnamon, eggs, vanilla, shortening, and 2 1∕2 cups flour. Using the dough hook on a heavy-duty stand mixer, beat mixture at low speed for 1 minute. Increase speed to medium and continue to beat for 2 more minutes. Add remaining 2 1∕2 cups flour, and beat to combine. Cover dough, and let rise in a warm place (85°) free from drafts until doubled in size, approximately 1 hour.
  3. Turn dough out onto a well-floured surface. Roll dough to 1∕2-inch thickness. Using a mini (1 1∕2- to 2-inch) doughnut cutter, cut out doughnuts.
  4. In a heavy-bottomed saucepan, pour peanut oil to a depth of 3 inches; heat oil to 350°. Add doughnuts to hot oil in small batches, being careful not to crowd pan. Fry until light golden brown, approximately 1 to 2 minutes per side. Remove and drain on a paper bag. Let cool slightly.
  5. Sprinkle half of doughnuts with Cinnamon Sugar. When completely cooled, dip remaining doughnuts in Maple Glaze.

Cinnamon Sugar
Yield: approximately 1∕2 cup
