Grilled Peach Salsa

Ingredients
  1. 8 fresh peaches, peeled, cut in half, and pits removed
  2. 1⁄3 cup chopped fresh cilantro
  3. 1⁄4 cup diced onion
  4. 3 tablespoons minced fresh jalapeño
  5. 2 garlic cloves, minced
  6. 3 tablespoons fresh lime juice
  7. 1 recipe Tortilla Chips (recipe follows)
Instructions
  1. Preheat grill to medium-high heat (350° to 400°). Spray grill rack with nonstick, nonflammable cooking spray.
  2. Grill peaches over direct heat until just cooked through, approximately 5 minutes per side. When cool enough to handle, chop peaches into small bite-size pieces.
  3. In a large bowl, combine peaches, cilantro, onion, jalapeño, garlic, and lime juice. Serve immediately with Tortilla Chips.

Tortilla Chips
Yield: 6 to 8 servings

Ingredients
  1. 8 (8-inch) flour tortillas
  2. Nonstick cooking spray
  3. 1 teaspoon kosher salt
  4. 1 teaspoon cracked black pepper
Instructions
  1. Preheat oven to 350°. Line baking sheets with parchment paper.
  2. Spray tortillas with nonstick cooking spray. Sprinkle tortillas evenly with salt and pepper. Cut each tortilla into 8 wedges. Arrange on prepared baking sheets.
  3. Bake until lightly browned, approximately 8 minutes. Let cool completely on wire racks.
