Grill-Smoked Chicken

Makes about 8 servings
Ingredients
- 2 (4- to 5-pound) whole chickens
- Chicken Rub (recipe follows)
Instructions
- Remove giblets from chicken; discard. Coat chickens with Chicken Rub. Tie legs together with kitchen twine. Wrap in plastic wrap; refrigerate for at least 12 hours.
- Remove plastic wrap. Prepare grill as directed in our guide; preheat to 250°.
- Place chicken on unlit side of grill. Grill, covered, until a meat thermometer inserted in thickest portion registers 165°, about 3 hours. Let stand for 10 minutes.

Ingredients
- 1/4 cup smoked paprika
- 1/4 cup firmly packed light brown sugar
- 3 tablespoons kosher salt
- 2 tablespoons onion powder
- 2 tablespoons garlic powder
- 2 tablespoons dry mustard
- 2 tablespoons chili powder
- 2 tablespoons ground black pepper
- 2 teaspoons ground red pepper
- 2 tablespoons fennel seed
- 2 tablespoons celery seed
- 2 tablespoons ground ginger
Instructions
- In a small bowl, mix together all ingredients.
