Granola-Fruit Parfaits

  1. 6 cups Homemade Granola (recipe follows)
  2. 18 fresh grapefruit segments
  3. 18 slices fresh pineapple, cut into chunks
  4. 6 cups vanilla-flavored yogurt
  5. Garnish: additional granola, pineapple chunks, grapefruit segments
  1. In individual trifle dishes or glasses, layer granola, grapefruit, pineapple, and yogurt as desired. Garnish with granola, pineapple, and grapefruit, if desired.

Homemade Granola
Yield: approximately 7 1/2 cups

  1. 3 cups old-fashioned oats
  2. 1 cup sliced almonds
  3. 1 cup sunflower seeds
  4. 1 cup chopped pitted dates
  5. 1 cup chopped dried apricots
  6. 1⁄2 cup unsweetened flaked coconut
  7. 1⁄3 cup firmly packed dark brown sugar
  8. 1⁄3 cup maple syrup
  9. 1⁄4 cup vegetable oil
  10. 1⁄2 teaspoon salt
  1. Preheat oven to 250°.
  2. In a large bowl, combine oats, almonds, sunflower seeds, dates, apricots, and coconut.
  3. In a medium bowl, whisk together brown sugar, maple syrup, oil, and salt. Pour over oat mixture, stirring to combine. Spread mixture in an even layer on 2 rimmed baking sheets.
  4. Bake 1 hour, stirring every 15 minutes. Let cool completely. Store in an airtight container up to 2 weeks.
