Ginger-Lime Simple Syrup

Yield: approximately 5 cups
Ingredients
- 5 cups sugar
- 4 cups water
- 2 3⁄4 cups sliced fresh ginger
- 2 (2-inch) strips lime zest
- 1 cup fresh lime juice
Instructions
- In a large saucepan, bring sugar, 4 cups water, ginger, and lime zest and juice to a boil over medium-high heat. Immediately reduce temperature to low, and simmer 1 hour. Remove from heat, and let cool to room temperature. Strain and place in sealable containers, such as jars. Store, covered, in refrigerator up to 1 month.

Does it scale well if I’m making a smaller batch? 13 cups is a lot of syrup.
Hi Monica! This syrup recipe yields 5 cups. If, however, you want a smaller yield, it can easily be cut in half.
