To score the glazed ham, start on one side, and make 1⁄3-inch-deep diagonal cuts approximately 1 inch apart. Make similar cuts in the opposite direction, creating a diamond pattern. Repeat on the opposite side.

Ingredients
  1. ½ cup water
  2. 1 (10- to 11-pound) 25% less-sodium bone-in smoked ham (shank portion)
  3. ⅔ cup fig preserves
  4. ½ cup whole-grain mustard
Instructions
  1. Preheat oven to 325°. Line a shallow roasting pan with aluminum foil; pour ½ cup water in pan. Using a sharp knife, lightly score outside of ham (see note above). Place ham in prepared pan; loosely cover with foil.
  2. In a medium bowl, stir together fig preserves and mustard; set aside.
  3. Bake ham 1 hour. Uncover, and brush with one-third fig mixture. Continue baking, basting occasionally with remaining fig mixture, until a meat thermometer reads 148°, approximately 1½ hours more. Let stand 15 minutes. Place ham on a serving platter; drizzle with approximately ⅓ cup pan juices.
