Coconut Frosting
Yields: About 5 cups
 
Ingredients
  • 1⅓ cups unsalted butter, softened
  • 1¼ teaspoons kosher salt
  • ½ teaspoon coconut extract
  • 2 pounds confectioners’ sugar
  • ⅔ cup heavy whipping cream
Instructions
  1. In the bowl of a stand mixer fitted with the paddle attachment, beat butter, salt, and coconut extract at medium speed until creamy, 4 to 5 minutes. Reduce mixer speed to low. Gradually add confectioners’ sugar alternately with cream, beating until smooth. Increase speed to medium, and beat for 1 minute. Use immediately.
