Quick Pickled Cucumbers
Yields: 1½ Cups
 
Ingredients
  • 1 cup thinly sliced cucumber
  • 1 cup thinly sliced onion
  • 2 tablespoons distilled white vinegar
  • 1 tablespoon sugar
  • 1 teaspoon vegetable oil
  • ¼ teaspoon kosher salt
Instructions
  1. In a medium bowl, toss together all ingredients. Cover and let stand for at least 1 hour or refrigerate for up to 3 days.
