Quick Pickled Cucumbers
- 1 cup thinly sliced cucumber
- 1 cup thinly sliced onion
- 2 tablespoons distilled white vinegar
- 1 tablespoon sugar
- 1 teaspoon vegetable oil
- ¼ teaspoon kosher salt
- In a medium bowl, toss together all ingredients. Cover and let stand for at least 1 hour or refrigerate for up to 3 days.
