When it comes to fresh summer tomatoes, there’s a lot to love. You have the range of bright colors—yellow, red, orange, and green. Then, there’s the sheer volume of varieties; you might turn up your nose to a beefsteak but find the sweet pop of a grape tomato irresistible. Of course, the health benefits are not to be overlooked. Tomatoes are rich in Vitamins C, E, and K, as well as in potassium and fiber.
Here in the South, tomatoes are their own source of cultural inspiration. Consider the words of Fannie Flagg in her novel Fried Green Tomatoes at the Whistle Stop Café, “Remember if people talk behind your back, it only means you are two steps ahead.” One could argue that tomatoes become downright edifying.
So when we started collecting favorite tomato recipes for our July/August issue, we had no shortage of options. We created a gorgeous Skillet Tomato Pie that we featured on our cover. Then we roasted some, grilled others, and made an irresistible salad out of some beautiful heirlooms. Of course, we couldn’t resist putting our own extra-crispy spin on fried green tomatoes, either.
