Collards with Bacon and Pickled Onions

Ingredients
  1. 3 slices thick-cut bacon, chopped
  2. 1 cup chopped onion
  3. 3 cloves garlic, sliced
  4. 2 (16-ounce) bags ready-to-cook chopped fresh collard greens
  5. 3 cups chicken broth
  6. 1 cup water
  7. 1½ teaspoons salt
  8. ½ teaspoon crushed red pepper
  9. ¼ cup seasoned rice vinegar
  10. Quick Pickled Onions (see recipe card below)
Instructions
  1. In a large stockpot, cook bacon over medium heat until crisp. Add onion and garlic; cook until onion begins to soften, approximately 2 minutes. Add collards, broth, 1 cup water, salt, and red pepper; bring to a boil. Reduce heat to medium-low; cover, and simmer for 30 minutes or until desired degree of doneness is reached. Stir in vinegar. Serve with Quick Pickled Onions.

Quick Pickled Onions

Ingredients
  1. 2 cups diced onion
  2. ¼ cup seasoned rice vinegar
  3. 1 teaspoon sugar
  4. ½ teaspoon salt
Instructions
  1. In a medium glass bowl, combine onion, vinegar, sugar, and salt; stir well. Cover, and refrigerate for at least 2 hours or up to 1 week.
