Homemade truffles make an extra-special holiday gift. Prepare the recipe for Classic Chocolate Truffles, and try any of these festive flavor combinations to mix things up.

Classic Chocolate Truffles
Yield: approximately 20 truffles

Ingredients
  1. 3⁄4 cup heavy whipping cream
  2. 2 cups semisweet or bittersweet chocolate morsels, such as Ghirardelli
Instructions
  1. Line a rimmed baking sheet with parchment paper. Set aside.
  2. In a medium saucepan, bring cream just to a boil. Remove from heat; add chocolate morsels, stirring until melted. Add additional flavorings, if desired (see below).
  3. Pour chocolate mixture into an 8x8-inch pan. Refrigerate until firm but not solid, approximately 1 hour.
  4. Using a 1-inch spring-loaded scoop or a tablespoon, scoop chocolate mixture into balls, and place on prepared pan. Freeze until set, approximately 15 minutes.
  5. Roll balls to smooth edges. Cover, and refrigerate up to 10 days. Serve at room temperature.

Pistachio-Cardamom Truffles
Stir 1⁄4 teaspoon ground cardamom into warm chocolate mixture. Refrigerate, scoop, and freeze as directed. Roll in chopped pistachios to coat.

Toasted Coconut-Bourbon Truffles
Stir 2 tablespoons bourbon into warm chocolate mixture. Refrigerate, scoop, and freeze as directed. Roll in toasted coconut to coat.

Peppermint Truffles
Stir 2 tablespoons peppermint liqueur into warm chocolate mixture. Refrigerate, scoop, and freeze as directed. Dip in slightly cooled melted white chocolate. Place on prepared pan. Immediately top with crushed peppermint. Refrigerate until set, approximately 10 minutes.

Coffee-Flavored Truffles
Stir 3 tablespoons coffee-flavored liqueur into warm chocolate mixture. Refrigerate, scoop, and freeze as directed. Dip in slightly cooled melted milk chocolate. Place on prepared pan. Immediately top with coffee beans. Refrigerate until chocolate is set, approximately 10 minutes.
