Citrus and Shaved Fennel Salad

Yield: approximately 8 servings
Ingredients
- 6 oranges, peeled and sliced crosswise
- 2 grapefruit, peeled and sliced crosswise
- 1⁄2 bulb fennel, cored, thinly sliced, and fronds reserved
- 3 tablespoons pomegranate seeds
- Sherry-Herb Vinaigrette (recipe follows)
- Garnish: fennel fronds, fresh parsley leaves
Instructions
- On a serving platter, layer orange, grapefruit, and fennel. Sprinkle evenly with pomegranate seeds.
- Drizzle with Sherry-Herb Vinaigrette just before serving. Garnish with fennel fronds and parsley, if desired.

Sherry-Herb Vinaigrette

Ingredients
- 1⁄4 cup plus 2 tablespoons sherry vinegar
- 1⁄4 cup extra-virgin olive oil
- 1 tablespoon honey
- 1 teaspoon kosher salt
- 1⁄4 teaspoon ground black pepper
- 2 tablespoons torn fresh basil leaves
- 2 tablespoons chopped fresh parsley
Instructions
- In a small bowl, whisk together vinegar, olive oil, honey, salt, pepper, basil, and parsley.
