These sandwich cookies with peanut butter filling are so tasty and are incredibly fun to bake with the kids!

Chocolate and Peanut Butter Sandwich Cookies

Yield: 2 dozen sandwich cookies
Ingredients
- 2 cups unsalted butter, softened
- 1 cup confectioners’ sugar
- 4 (1-ounce) squares semisweet chocolate, melted and cooled
- 1 teaspoon vanilla extract
- 4 cups all-purpose flour
- 1 teaspoon baking powder
- 1⁄2 teaspoon salt
- 2 tablespoons sugar Peanut Butter Filling (recipe follows)
Instructions
- In a large bowl, beat butter and confectioners’ sugar at high speed with an electric mixer until creamy. Stir in melted chocolate and vanilla.
- In a medium bowl, sift together flour, baking powder, and salt. Reduce mixer speed to low, and gradually add flour mixture to chocolate mixture, beating to combine. Shape dough into a disk. Wrap in plastic wrap, and refrigerate for at least 2 hours.
- Preheat oven to 350°. Line 2 baking sheets with parchment paper. Set aside.
- Let dough stand at room temperature until soft enough to roll. On a lightly floured surface, roll dough to 1⁄4-inch thickness. Using a 21⁄2-inch round cutter, cut cookies. Place on a prepared baking sheet. Cut out centers of half of cookies with 1⁄2-inch assorted Halloween-shaped cookie cutters (see note), and place on remaining baking sheet. Sprinkle cookies with centers removed with sugar.
- Bake for 12 minutes. Let cool on pans for 5 minutes. Remove from pans, and let cool completely on wire racks.
- Spread approximately 1 teaspoon Peanut Butter Filling on flat side of round cookies. Top with cut-out cookies. Store in an airtight container at room temperature for up to 3 days.
