Chocolate and Peanut Butter Sandwich Cookies

These sandwich cookies with peanut butter filling are so tasty and are incredibly fun to bake with the kids!

Chocolate and Peanut Butter Sandwich Cookies
Yield: 2 dozen sandwich cookies

  1. 2 cups unsalted butter, softened
  2. 1 cup confectioners’ sugar
  3. 4 (1-ounce) squares semisweet chocolate, melted and cooled
  4. 1 teaspoon vanilla extract
  5. 4 cups all-purpose flour
  6. 1 teaspoon baking powder
  7. 1⁄2 teaspoon salt
  8. 2 tablespoons sugar Peanut Butter Filling (recipe follows)
  1. In a large bowl, beat butter and confectioners’ sugar at high speed with an electric mixer until creamy. Stir in melted chocolate and vanilla.
  2. In a medium bowl, sift together flour, baking powder, and salt. Reduce mixer speed to low, and gradually add flour mixture to chocolate mixture, beating to combine. Shape dough into a disk. Wrap in plastic wrap, and refrigerate for at least 2 hours.
  3. Preheat oven to 350°. Line 2 baking sheets with parchment paper. Set aside.
  4. Let dough stand at room temperature until soft enough to roll. On a lightly floured surface, roll dough to 1⁄4-inch thickness. Using a 21⁄2-inch round cutter, cut cookies. Place on a prepared baking sheet. Cut out centers of half of cookies with 1⁄2-inch assorted Halloween-shaped cookie cutters (see note), and place on remaining baking sheet. Sprinkle cookies with centers removed with sugar.
  5. Bake for 12 minutes. Let cool on pans for 5 minutes. Remove from pans, and let cool completely on wire racks.
  6. Spread approximately 1 teaspoon Peanut Butter Filling on flat side of round cookies. Top with cut-out cookies. Store in an airtight container at room temperature for up to 3 days.
