Chipotle Triple-Cheese Melt

Yield: 6 sandwiches
Ingredients
- 6 slices deli-sliced smoked Gouda cheese
- 6 slices deli-sliced fontina cheese
- 6 slices deli-sliced extra-sharp Cheddar cheese
- 12 slices sourdough bread
- 1 recipe Chipotle Buttercream (recipe follows)
- Tomato soup
Instructions
- Place 1 slice smoked Gouda, fontina, and Cheddar on each of 6 slices bread. Spread about 2 tablespoons Chipotle Buttercream on remaining 6 slices bread, and place, buttered side down, on top of cheese slices. Spread Chipotle Buttercream on each side of prepared sandwiches.
- Heat a nonstick skillet over medium-low heat. Cook sandwiches until lightly browned and cheese is melted, 6 to 7 minutes per side. Serve immediately with tomato soup, if desired.

Chipotle Buttercream

Yield: approximately 1 cup
Ingredients
- 1⁄2 cup butter, softened
- 1 (3-ounce) package cream cheese, softened
- 1⁄4 cup adobo sauce (from chipotle peppers in adobo)
- 1⁄8 teaspoon ground chipotle pepper
- 1⁄8 teaspoon ground red pepper
Instructions
- In a medium bowl, beat butter at medium speed with an electric mixer until creamy. Add cream cheese, adobo sauce, chipotle pepper, and red pepper. Beat at medium speed until smooth.
- Use immediately, or store, covered, in refrigerator for up to 5 days.
