Chipotle Triple-Cheese Melt

Ingredients
  1. 6 slices deli-sliced smoked Gouda cheese
  2. 6 slices deli-sliced fontina cheese
  3. 6 slices deli-sliced extra-sharp Cheddar cheese
  4. 12 slices sourdough bread
  5. 1 recipe Chipotle Buttercream (recipe follows)
  6. Tomato soup
Instructions
  1. Place 1 slice smoked Gouda, fontina, and Cheddar on each of 6 slices bread. Spread about 2 tablespoons Chipotle Buttercream on remaining 6 slices bread, and place, buttered side down, on top of cheese slices. Spread Chipotle Buttercream on each side of prepared sandwiches.
  2. Heat a nonstick skillet over medium-low heat. Cook sandwiches until lightly browned and cheese is melted, 6 to 7 minutes per side. Serve immediately with tomato soup, if desired.

Chipotle Buttercream
Yield: approximately 1 cup

Ingredients
  1. 1⁄2 cup butter, softened
  2. 1 (3-ounce) package cream cheese, softened
  3. 1⁄4 cup adobo sauce (from chipotle peppers in adobo)
  4. 1⁄8 teaspoon ground chipotle pepper
  5. 1⁄8 teaspoon ground red pepper
Instructions
  1. In a medium bowl, beat butter at medium speed with an electric mixer until creamy. Add cream cheese, adobo sauce, chipotle pepper, and red pepper. Beat at medium speed until smooth.
  2. Use immediately, or store, covered, in refrigerator for up to 5 days.
