Bourbon-Benne Brittle

You don’t need a holiday to make brittle. Leave a box of this on your neighbor’s doorstep and be on their nice list all year.

Bourbon-Benne Brittle
 
Makes About 4 Cups
Ingredients
  • 1½ cups sugar
  • ½ cup light corn syrup
  • ½ cup bourbon
  • ½ cup raw benne seeds
  • 2 tablespoons unsalted butter
  • 1 teaspoon baking soda
  • ¼ teaspoon kosher salt
Instructions
  1. Spray a large rimmed baking sheet with cooking spray, or line pan with a nonstick baking mat.
  2. In a medium saucepan, bring sugar, corn syrup, and bourbon to a boil over medium heat. Stir in benne seeds; cook, stirring constantly, until mixture registers 300° on a candy thermometer, about 30 minutes.
  3. Remove from heat; quickly stir in butter, baking soda, and salt until combined. Pour onto prepared pan, smoothing with a spatula. Let cool completely; break into pieces. Store brittle in an airtight container.
