Bourbon-Benne Brittle
Makes About 4 Cups
Ingredients
- 1½ cups sugar
- ½ cup light corn syrup
- ½ cup bourbon
- ½ cup raw benne seeds
- 2 tablespoons unsalted butter
- 1 teaspoon baking soda
- ¼ teaspoon kosher salt
Instructions
- Spray a large rimmed baking sheet with cooking spray, or line pan with a nonstick baking mat.
- In a medium saucepan, bring sugar, corn syrup, and bourbon to a boil over medium heat. Stir in benne seeds; cook, stirring constantly, until mixture registers 300° on a candy thermometer, about 30 minutes.
- Remove from heat; quickly stir in butter, baking soda, and salt until combined. Pour onto prepared pan, smoothing with a spatula. Let cool completely; break into pieces. Store brittle in an airtight container.
