Blue-Cheese Buffalo Burgers

Ingredients
  1. 21⁄2 pounds ground chuck
  2. 1 pound hickory-smoked bacon, cooked and crumbled
  3. 2 (4-ounce) containers crumbled blue cheese
  4. 2 tablespoons Worcestershire sauce
  5. 1 tablespoon minced garlic
  6. 1 teaspoon ground black pepper
  7. 1⁄4 teaspoon salt
  8. 1 recipe Buffalo Mayonnaise (recipe follows)
  9. 8 onion rolls, split and toasted
  10. 1 recipe Grilled Onions (recipe follows)
Instructions
  1. In a large bowl, combine ground chuck, bacon, blue cheese, Worcestershire, garlic, pepper, and salt. Shape mixture into 8 patties.
  2. Spray grill with nonstick, nonflammable cooking spray. Preheat grill to medium-high heat (400° to 450°).
  3. Grill hamburgers, covered with grill lid, until desired degree of doneness is reached, approximately 5 to 6 minutes per side.
  4. Spread Buffalo Mayonnaise on bottom half of each onion roll; top with one burger. Top burgers with Grilled Onions. Spread Buffalo Mayonnaise on top half of each onion roll. Top each burger with onion roll tops. Serve immediately.

  2. 3 tablespoons buffalo-wing sauce
  3. 1⁄2 teaspoon hot pepper sauce
  4. 1⁄4 teaspoon garlic powder
  5. 1⁄4 teaspoon ground black pepper
Instructions
  1. In a small bowl, combine mayonnaise, buffalo-wing sauce, hot pepper sauce, garlic powder, and pepper. Refrigerate until serving time.

  1. 2 large yellow onions, sliced
  2. 1⁄2 inch thick
  3. 2 tablespoons olive oil
  4. 1⁄2 teaspoon salt
  5. 1⁄4 teaspoon ground black pepper
Instructions
  1. Brush both sides of onion slices with olive oil; sprinkle evenly with salt and pepper.
  2. Spray grill with nonstick, nonflammable cooking spray. Preheat grill to medium-high heat (400° to 450°).
  3. Grill onion slices, covered with grill lid, until desired degree of doneness is reached, approximately 4 to 5 minutes per side.
