Bacon-Barbecue Meatloaf

Yield: 2 (8-inch) meatloaves
Ingredients
- 1 cup fresh bread crumbs (approximately 2 slices white bread)
- 3 to 4 tablespoons whole milk
- 1 pound ground beef
- 1 pound ground pork
- 1⁄2 pound Italian pork sausage, casings removed
- 11⁄4 cups barbecue sauce, divided (see note)
- 1⁄2 cup finely chopped onion
- 1⁄2 teaspoon garlic powder
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon ground black pepper
- 1 large egg, lightly beaten
- 6 slices bacon, halved crosswise (see note)
Instructions
- Preheat oven to 350°. Line the bottom of a broiler pan with aluminum foil. Add broiler rack; spray with nonstick cooking spray. Set aside.
- In a large bowl, place bread crumbs; sprinkle with milk, 1 tablespoon at a time, until lightly moist. Gently toss with a fork. Let stand for 5 minutes. Add beef, pork, sausage, 1⁄2 cup barbecue sauce, onion, garlic powder, salt, pepper, and egg. Gently combine with hands. Divide meat mixture in half. Place each portion on prepared broiler rack; pat each into an 8-inch loaf, approximately 1 1⁄2 inches thick. Brush each with 2 tablespoons barbecue sauce. Arrange 6 bacon pieces crosswise over each meatloaf.
- Bake until a meat thermometer reaches 160°, approximately 45 minutes, basting occasionally with remaining 1⁄2 cup barbecue sauce. Let stand for 15 minutes before serving.
Note
- We recommend using a thick barbecue sauce that will adhere to bacon, such as Stubb’s Original. We also recommend not using center-cut bacon; the strips are too short to cover meat loaves when cut in half.
