Apple Tuna Salad

This was one of Ashley Mac’s most requested recipes for the cookbook. She hopes you enjoy her Apple Tuna Salad as much as her fans do!

Apple Tuna Salad
Makes 4 cups
  • 1 large hard-boiled egg
  • 1 cup mayonnaise
  • ½ cup diced Pink Lady apple
  • ⅓ cup finely chopped celery
  • 2 tablespoons minced red onion
  • 1 teaspoon fresh lemon juice
  • ¼ teaspoon kosher salt
  • ¼ teaspoon freshly cracked black pepper
  • 2 (12-ounce) cans solid white tuna in spring water, drained and flaked
  1. Peel and chop hard-boiled egg. Place in a medium bowl, and stir in mayonnaise, apple, celery, onion, lemon juice, salt, and pepper. Stir in tuna. Cover and refrigerate for at least 1 hour before serving.
