Ingredients
  1. 2 cups old-fashioned oats
  2. 1 1⁄3 cups sweetened flaked coconut
  3. 1 cup coarsely chopped pecans
  4. 1⁄4 cup roasted salted pumpkin seeds
  5. 1⁄4 cup sesame seeds
  6. 1⁄2 cup Orange Syrup (recipe follows)
  7. 1⁄4 cup canola oil
  8. 2 tablespoons honey
  9. 1 large egg white, lightly beaten
  10. 1 1⁄2 teaspoons kosher salt
  11. 1 cup dried tart cherries
Instructions
  1. Preheat oven to 250°. Line a rimmed baking sheet with parchment paper. Set aside.
  2. In a large bowl, stir together oats, coconut, pecans, pumpkin seeds, sesame seeds, Orange Syrup, canola oil, honey, egg white, and salt until well combined. Spread in an even layer on prepared pan.
  3. Bake, stirring every 15 minutes, until light golden brown, 50 to 60 minutes. Remove from oven; stir in cherries. Let cool to room temperature. Store in an airtight container up to 1 week.

Orange Syrup
Yield: approximately 1 cup

Ingredients
  1. 1 cup sugar
  2. 1 teaspoon orange zest
  3. 3/4 cup fresh orange juice
Instructions
  1. In a small saucepan, bring sugar and orange zest and juice to a boil over medium heat. Simmer, stirring occasionally, until thickened, approximately 10 minutes. Let cool to room temperature before using. Cover, and refrigerate up to 2 weeks.
