Warm Pumpkin-Hominy Dip

Ingredients
- 2 (15-ounce) cans pumpkin purée
- 1 (15.5-ounce) can golden hominy, drained
- 3 tablespoons olive oil, divided
- 1 1⁄2 teaspoons smoked paprika
- 1 teaspoon salt
- 1⁄2 teaspoon ground cumin
- 1⁄4 teaspoon garlic powder
- 1⁄4 teaspoon ground red pepper
- 2 teaspoons fresh lime juice
- 3 tablespoons roasted salted pumpkin seeds
- Crackers, breadsticks, and sliced vegetables, to serve
Instructions
- In the work bowl of a food processor, process pumpkin and hominy until smooth, approximately 1 minute.
- In a medium skillet, heat 2 tablespoons olive oil over medium heat. Add pumpkin mixture, smoked paprika, salt, cumin, garlic powder, and red pepper. Cook, stirring occasionally, until heated through, approximately 5 minutes. Stir in lime juice. Spoon into a serving bowl. Drizzle with remaining 1 tablespoon olive oil; sprinkle with pumpkin seeds. Serve with crackers, breadsticks, and sliced vegetables.
