Southern Red Pepper Jelly

This Red Pepper Jelly is perfect served with crackers as an appetizer for all your holiday parties, or spread on a sandwich for a tasty desk lunch. If you like your pepper jelly spicy, leave the jalapeño seeds in.

Southern Red Pepper Jelly
Yield: approximately 3 cups

Ingredients
  1. 1 (18-ounce) jar apple jelly
  2. 1 fresh jalapeño, seeded and minced
  3. ½ cup chopped red bell pepper
  4. 3 tablespoons apple cider vinegar
  5. ¼ teaspoon crushed red pepper
  6. ½ cup honey
Instructions
  1. In a medium saucepan, combine all ingredients. Bring to a boil over medium-high heat; cook, stirring occasionally, 5 minutes. Let cool completely. Divide among sealable containers; refrigerate until jelly sets up, 8 to 12 hours. Refrigerate up to 2 weeks.
