Southern Red Pepper Jelly

Yield: approximately 3 cups
Ingredients
- 1 (18-ounce) jar apple jelly
- 1 fresh jalapeño, seeded and minced
- ½ cup chopped red bell pepper
- 3 tablespoons apple cider vinegar
- ¼ teaspoon crushed red pepper
- ½ cup honey
Instructions
- In a medium saucepan, combine all ingredients. Bring to a boil over medium-high heat; cook, stirring occasionally, 5 minutes. Let cool completely. Divide among sealable containers; refrigerate until jelly sets up, 8 to 12 hours. Refrigerate up to 2 weeks.
