Rosemary Parmesan Grits Muffins

Ingredients
- 1∕4 cup butter, softened
- 2 tablespoons sugar
- 2 large eggs
- 1∕2 cup sour cream
- 1∕2 cup whole milk
- 1 cup all-purpose flour
- 2∕3 cup quick-cooking grits
- 1∕2 cup shredded Parmesan cheese
- 1 tablespoon chopped fresh rosemary
- 1 1∕2 teaspoons baking powder
- 1∕2 teaspoon salt
- 1∕4 teaspoon baking soda
Instructions
- Preheat oven to 400°. Spray 12 muffin cups with nonstick cooking spray.
- In a medium bowl, whisk together butter and sugar. Add eggs, sour cream, and milk; whisk until combined. Stir in flour, grits, cheese, rosemary, baking powder, salt, and baking soda. Mix just until combined. Spoon dough evenly into prepared pan.
- Bake until a wooden pick inserted in the center of muffins comes out clean, approximately 15 minutes. Let cool in pan for 5 minutes. Serve warm.
