Grilled Pimiento-Cheese Sandwiches

Ingredients
  1. 2 (3-ounce) packages cream cheese, softened
  2. 1 cup shredded mild Cheddar cheese
  3. 1/4 cup diced pimientos, drained
  4. 2 tablespoons sugar
  5. 1/4 teaspoon paprika
  6. 1/4 teaspoon celery salt
  7. 1/8 teaspoon ground red pepper
  8. 6 to 8 tablespoons butter, divided
  9. 12 to 16 slices whole-grain bread
Instructions
  1. In the work bowl of a food processor, combine cream cheese, Cheddar, pimientos, sugar, paprika, celery salt, and red pepper. Pulse until smooth. Cover, and refrigerate until ready to use.
  2. In a large skillet, melt 1 tablespoon butter. Spread desired amount of pimiento cheese on 1 slice bread, and top with another slice.
  3. Cook sandwich in skillet, approximately 4 minutes per side. Repeat with remaining butter, pimiento cheese, and bread.
