Grilled Pimiento-Cheese Sandwiches

Yield: 6 to 8 sandwiches
Ingredients
- 2 (3-ounce) packages cream cheese, softened
- 1 cup shredded mild Cheddar cheese
- 1/4 cup diced pimientos, drained
- 2 tablespoons sugar
- 1/4 teaspoon paprika
- 1/4 teaspoon celery salt
- 1/8 teaspoon ground red pepper
- 6 to 8 tablespoons butter, divided
- 12 to 16 slices whole-grain bread

Instructions
- In the work bowl of a food processor, combine cream cheese, Cheddar, pimientos, sugar, paprika, celery salt, and red pepper. Pulse until smooth. Cover, and refrigerate until ready to use.
- In a large skillet, melt 1 tablespoon butter. Spread desired amount of pimiento cheese on 1 slice bread, and top with another slice.
- Cook sandwich in skillet, approximately 4 minutes per side. Repeat with remaining butter, pimiento cheese, and bread.
