Grilled Peach Salsa

Yield: 6 to 8 servings
Ingredients
- 8 fresh peaches, peeled, cut in half, and pits removed
- 1⁄3 cup chopped fresh cilantro
- 1⁄4 cup diced onion
- 3 tablespoons minced fresh jalapeño
- 2 garlic cloves, minced
- 3 tablespoons fresh lime juice
- 1 recipe Tortilla Chips (recipe follows)
Instructions
- Preheat grill to medium-high heat (350° to 400°). Spray grill rack with nonstick, nonflammable cooking spray.
- Grill peaches over direct heat until just cooked through, approximately 5 minutes per side. When cool enough to handle, chop peaches into small bite-size pieces.
- In a large bowl, combine peaches, cilantro, onion, jalapeño, garlic, and lime juice. Serve immediately with Tortilla Chips.

Tortilla Chips

Yield: 6 to 8 servings
Ingredients
- 8 (8-inch) flour tortillas
- Nonstick cooking spray
- 1 teaspoon kosher salt
- 1 teaspoon cracked black pepper
Instructions
- Preheat oven to 350°. Line baking sheets with parchment paper.
- Spray tortillas with nonstick cooking spray. Sprinkle tortillas evenly with salt and pepper. Cut each tortilla into 8 wedges. Arrange on prepared baking sheets.
- Bake until lightly browned, approximately 8 minutes. Let cool completely on wire racks.
