Grill-Smoked Brisket
Makes 6 to 8 servings

Ingredients
  1. 1 (6-pound) flat-cut beef brisket, fat trimmed to 1⁄4 inch
  2. Brisket Rub (recipe follows)
Instructions
  1. Coat brisket with Brisket Rub. Wrap in plastic wrap; refrigerate for 12 to 24 hours.
  2. Remove plastic wrap. Prepare grill as directed in our guide; preheat to 250°.
  3. Place brisket on unlit side of grill. Grill, covered, until tender, 8 to 9 hours. Let stand for 10 minutes before slicing.

  1. 1/4 cup smoked paprika
  2. 1/4 cup firmly packed light brown sugar
  3. 3 tablespoons kosher salt
  4. 2 tablespoons onion powder
  5. 2 tablespoons garlic powder
  6. 2 tablespoons dry mustard
  7. 2 tablespoons chili powder
  8. 4 tablespoons ground black pepper
  9. 2 teaspoons ground red pepper
  10. 2 tablespoons ground cumin
  11. 2 tablespoons dried oregano
