Green Tomato Salsa

In a medium bowl, stir together 1 1⁄2 cups chopped green tomato, 1⁄4 cup minced seeded jalapeño, 2 tablespoons fresh lime juice, 1 tablespoon chopped fresh cilantro, 1 teaspoon minced garlic, 1⁄2 teaspoon kosher salt, and 1⁄4 teaspoon ground black pepper. Cover, and refrigerate up to 1 week. Yield: 2 cups
