People in every state of the union except North Dakota entered soup, salad, side, and sweet recipes in Taste of the South magazine’s and The North Carolina Sweet Potato Commission’s Sweet Potato Contest. Contest rules stated that recipes had to include at least 11⁄2 cups of mashed sweet potato or 1 medium fresh sweet potato. Additionally, recipes could use no more than eight ingredients, not including herbs and spices.
