Dry Rub Ribs

Ingredients
- ½ cup firmly packed light brown sugar
- 3 tablespoons smoked paprika
- 3 tablespoons ground cumin
- 2 tablespoons ground red pepper
- 2 tablespoons onion powder
- 2 tablespoons garlic powder
- 2 tablespoons salt
- 2 racks pork spare ribs (approximately 8 pounds)
- ¼ cup vegetable oil
- 1 recipe Classic Barbecue Sauce (Recipe card follows)
Instructions
- In a large bowl, combine brown sugar, smoked paprika, cumin, red pepper, onion powder, garlic powder, and salt.
- Rinse ribs, and pat dry. Remove thin membrane from back of ribs by piercing it with a sharp knife and pulling it off. Rub ribs with vegetable oil. Rub brown-sugar mixture evenly on ribs. Let sit at room temperature for 30 minutes to 1 hour.
- While meat is resting, spray grill with nonstick, nonflammable grill spray. Preheat grill to medium-high heat (350° to 400°). Grill ribs over indirect heat (see box at right), turning every 45 minutes, until very tender and cooked through, 2 to 3 hours. Brush with Classic Barbecue Sauce before serving.

- 1 (8-ounce) can tomato sauce
- ½ cup firmly packed light brown sugar
- ¼ cup unsulfured molasses
- ¼ cup apple-cider vinegar
- ¼ teaspoon ground red pepper
- ¼ teaspoon smoked paprika
Instructions
- In a medium bowl, whisk together tomato sauce, brown sugar, molasses, vinegar, red pepper, and paprika. Cover, and refrigerate until ready to use.
