Double-Pecan and Caramel Brownies

Made by simply grinding pecans, pecan flour gives these Double-Pecan and Caramel Brownies a dense and decadent texture.

Ingredients
  1. 1 cup unsalted butter
  2. 2 (12-ounce) packages semisweet chocolate morsels, divided
  3. 4 large eggs
  4. ¾ cup granulated sugar
  5. ½ cup firmly packed light brown sugar
  6. 2 tablespoons instant coffee
  7. 1 tablespoon vanilla extract
  8. ¾ cup all-purpose flour
  9. ¾ cup pecan flour (see tip above)
  10. ½ teaspoon kosher salt
  11. 2½ cups pecan halves, divided
  12. Caramel Sauce (recipe follows)
Instructions
  1. Preheat oven to 350°. Spray a 13x9-inch baking dish with baking spray with flour.
  2. In a large microwavable bowl, combine butter and 1 package chocolate morsels. Microwave on high in 30-second intervals, stirring between each, until butter and chocolate are melted and smooth (about 2 minutes total). Let cool for 10 minutes. Whisk in eggs, sugars, coffee, and vanilla.
  3. Add flours and salt, stirring until combined.
  4. Pour half of batter into prepared pan. Sprinkle with 1¼ cups pecans and half of remaining chocolate morsels. Spoon remaining batter over morsels. Top with remaining 1¼ cups pecan halves and remaining chocolate morsels.
  5. Bake until set, 25 to 30 minutes.
  6. Let cool completely. Drizzle with Caramel Sauce.

Note: To make Pecan Flour: Place 2 cups pecan halves in the work bowl of a food processor. Process until finely ground, about 25 seconds. Store in an airtight container in freezer for long-term freshness.

Caramel Sauce

Ingredients
  1. 1½ cups sugar
  2. ½ cup water
  3. ½ cup heavy whipping cream
  4. 2 tablespoons unsalted butter, softened
  5. ¼ teaspoon kosher salt
Instructions
  1. In a medium saucepan, bring sugar and ½ cup water to a boil over medium-high heat. Cook, without stirring, until mixture turns amber in color, about 10 minutes. Remove from heat. Stir in cream, butter, and salt until smooth. Let cool until slightly thickened, about 10 minutes.
