2 (16-ounce) bags frozen peaches
½ cup firmly packed brown sugar
¼ cup heavy whipping cream
½ teaspoon ground cinnamon
½ teaspoon vanilla extract
1 recipe Brown-Sugar Shortcake Biscuits 
1 recipe Sweetened Whipped Cream 
Garnish: ¼ cup unsweetened coconut flakes, toasted

1. In a large saucepan, combine peaches, brown sugar, whipping cream, cinnamon, and vanilla. Cook over medium-low heat for approximately 10 minutes, or until peaches are tender.

2. Split biscuits and place bottom halves on 6 dessert plates. Spoon peach mixture over each half. Top with Sweetened Whipped Cream and top halves of biscuits. Garnish with toasted coconut, if desired.
