Yield: approximately 11⁄2 cups

1½ cups sugar
1½ cups water
1 (2-inch) piece fresh ginger root, peeled and sliced
1 pinch sea salt
1. In a small saucepan, combine sugar, 1½ cups water, ginger, and salt. Bring to a boil over high heat, stirring occasionally, until sugar is dissolved, approximately 10 minutes. Remove from heat, and let cool completely. Strain, and store in refrigerator for up to 2 weeks.
