6 tablespoons unsalted butter, melted
1½ tablespoons minced fresh parsley
2 teaspoons minced fresh garlic
1 teaspoon lemon zest
½ teaspoon red pepper flakes
36 oysters on the half shell
1. Preheat grill to 400° to 450°.
2. In a small bowl, combine butter, parsley, garlic, lemon zest, and red pepper flakes. Brush each oyster on the half shell with butter mixture.
3. Position half of oyster shells on grill. Cover with grill lid, and cook until juices are bubbling and edges of oysters curl, 3 to 5 minutes. Using tongs, carefully transfer oysters to a serving platter. Repeat grilling process with remaining oysters. Serve immediately.
