½ cup firmly packed light brown sugar
3 tablespoons smoked paprika
3 tablespoons ground cumin
2 tablespoons ground red pepper
2 tablespoons onion powder
2 tablespoons garlic powder
2 tablespoons salt
2 racks pork spare ribs (approximately 8 pounds)
¼ cup vegetable oil
1 recipe Classic Barbecue Sauce1. In a large bowl, combine brown sugar, smoked paprika, cumin, red pepper, onion powder, garlic powder, and salt.
2. Rinse ribs, and pat dry. Remove thin membrane from back of ribs by piercing it with a sharp knife and pulling it off. Rub ribs with vegetable oil. Rub brown-sugar mixture evenly on ribs. Let sit at room temperature for 30 minutes to 1 hour.
3. While meat is resting, spray grill with nonstick, nonflammable grill spray. Preheat grill to medium-high heat (350° to 400°). Grill ribs over indirect heat (see box at right), turning every 45 minutes, until very tender and cooked through, 2 to 3 hours. Brush with Classic Barbecue Sauce before serving.
