Yield: approximately 6 servings
2 cups strawberries, hulled and halved
1/3 cup fresh mint leaves
2 tablespoons sugar
2 tablespoons fresh lemon juice
1 (750-ml) bottle Prosecco, chilled
Garnish: strawberries, fresh mint
1. In the container of a blender, combine strawberries, mint, sugar, and lemon juice. Blend until smooth, stopping blender occasionally to scrape down sides. Using a spatula or spoon, press strawberry mixture through a fine-mesh sieve into a bowl.
2. For each serving, spoon 1 to 2 tablespoons strawberry mixture into a small glass. Top with about ½ cup chilled wine; stir. Garnish with strawberries and mint, if desired.
