Yield: 8 to 10 (4-inch) waffles
2 cups self-rising flour
3 tablespoons sugar
¼ teaspoon salt
1¼ cups whole milk
1/3 cup canola oil
2 large eggs
1. Preheat a waffle iron to medium.
2. In a large bowl, combine flour, sugar, and salt. In a small bowl, whisk together milk, oil, and eggs. Make a well in the center of flour mixture; add milk mixture. Stir just until combined.
3. For each waffle, pour approximately 1/3 cup batter onto hot, greased waffle iron. Bake until golden brown, 4 to 6 minutes. Serve warm.
